Salmon Patties are one of my favorite things to make for dinner! They are super healthy (full of Omega-3s, protein and vitamins) and so easy to make!  I usually serve them with a spinach salad.

Recipe:

Ingredients:

  • 1 can (15 oz) of wild skinless, boneless salmon
  • 2/3 cup of breadcrumbs
  • 1 egg, beaten
  • 4 green onions, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 small red onion, diced (can replace with celery if preferred)
  • 1/4 cup of light mayonnaise
  • 3 tablespoons of extra virgin olive oil for cooking

 

Instructions:

  1. Open the can of salmon and drain it thoroughly.
  2. In a large bowl, combine the salmon, egg, breadcrumbs, green onions, red pepper, onion, and mayonnaise. Mix until well combined.
  3. Shape the mixture into 4 even-sized patties (2 per person)
  4. In a large pan, add the olive oil with stove on medium heat. Add the salmon patties and cook until they are golden brown on each side.
  5. Serve and enjoy with side dishof choice.
