Salmon Patties are one of my favorite things to make for dinner! They are super healthy (full of Omega-3s, protein and vitamins) and so easy to make! I usually serve them with a spinach salad.
Recipe:
Ingredients:
- 1 can (15 oz) of wild skinless, boneless salmon
- 2/3 cup of breadcrumbs
- 1 egg, beaten
- 4 green onions, finely chopped
- 1 red bell pepper, finely chopped
- 1 small red onion, diced (can replace with celery if preferred)
- 1/4 cup of light mayonnaise
- 3 tablespoons of extra virgin olive oil for cooking
Instructions:
- Open the can of salmon and drain it thoroughly.
- In a large bowl, combine the salmon, egg, breadcrumbs, green onions, red pepper, onion, and mayonnaise. Mix until well combined.
- Shape the mixture into 4 even-sized patties (2 per person)
- In a large pan, add the olive oil with stove on medium heat. Add the salmon patties and cook until they are golden brown on each side.
- Serve and enjoy with side dishof choice.
